Ingredients

Pork tenderloin
1 tin prunes in apple juice

Recipe:

  1. Pre-heat the oven to 200°C or gas mark 6
  2. De-stone the prunes
  3. Cut the tenderloin into nice chunky pork medallions – about 20mm thick – and place in a roasting dish or deep roasting tray
  4. Drizzle the prunes and apple juice over the pork medallions
  5. Place in the centre of the oven and cook for 8 minutes
  6. Take out of the oven and leave to rest for 5 minutes

We recommend serving with celeriac mash or mini roast potatoes and broccoli.
